INTRODUCTION:
LYCOPENE because of its unique chemical structure is the best-known biological quencher of free radicals. The quenching involves a physical reaction in which the energy of the excited oxygen is transferred to the carotenoid forming an excited state molecule. It plays an important part in the natural mechanism, which protects the organism from the damaging effect of free radicals, thus protecting us against the onset of degenerative diseases.
